Great quality mince - the best. I thought the organic mince I paid more for in the supermarket was fine until I saw the difference when cooking with The Free Range Butcher mince. It doesn't have anywhere near the amount of fat that the store bought meat does. Obviously lean animals the way nature intended. Perfect for the paleo diet or any really.

I have been using the Free Range Butcher mince for years, as I know it is great quality and lean. I was reminded of this when I recently used supposedly premium mince from the highly reputable local butcher and the fat content was huge. I had to wait until the dish I had prepared was cold to scoop the fat off before I would serve. I have never had to do this with FRB mince.

Beef soup bones - did the trick! Roasted them in a little virgin olive oil, put them in a large pot with big chunks of celery, onion and carrots, brought it to the boil, removed scum and left to boil on the lowest heat all day. Left to cool over night, removed fat, strained soup, discarded bones and veg. The stock looked as true stock should, very solid jelly. Yum!

Using half the home made stock (using the Free Range Butcher's beautiful beef soup bones) added some sliced beef rump steak, finely chopped carrots, broccoli, one ripe chopped tomato and yesterdays left over boiled potatoes and chives, (admit to adding a tiny bit of salt/ or you can add a cup or two of Cambpells low salt beef stock to add more salty flavour) cook on low heat for half an hour or till beef melts in your mouth, add risoni, rice or fine noodles and enjoy. Ok... I admit to chopping off a bit of rump steak for my lunch and fried it with a little butter, pepper and extra virgin olive oil and enjoyed with a few mushrooms in parsley and beetroot - sooo good!

Used Delia Smith's method, wrapping the bird in foil until 30 minutes before end of cooking time, then allowing 30 minutes to rest. A succulent bird, with moist flesh it fed 15 people so well that the anticipated left overs were very modest. What is now left will be turned into stock. These are the tastiest and best turkeys we have ever had and leave the frozen supermarket product for dead.

1 package per person is a must. More if you have big eaters coming to dine.
My guests said they weren't that hungry after pre dinner drinks and nibbly foods. They devoured every scrap and kept commenting how good the ribs were. That says it all. Good product!! Buy extra!!!

I've noticed a strange taste in the beef in NSW over the last 2 years. The Scotch Fillet and meats sold by the Free Range Butcher does not have this odd flavour. Instead it tastes of real meat. The way steak should taste. These are the best steaks I can find to buy in Sydney.
I'm always impressed that the steaks get bigger when cooking instead of shrinking to nothing.

I browned the ribs and put them in the slow cooker with some tomato pasata and bbq sauce. These are so tender and just melt in your mouth.

Pork Belly
Defrost pork uncovered in the fridge
Dry any moisture from the pork with paper towel
Score the rind and rub with oil and lots of rock salt
Cook at 220c for 30min
Turn oven down to 170c
Add chopped onion, carrot and cabbage to the pan with chicken stock and salt.
Cook for 1 hour.

Recipe for my Lamb Neck Curry
Melt ghee and cook 2 onions, 1 clove of garlic, 1 carrot, 1 stick of celery, 3 tsp coriander, 2 tsp cumin, 1 tsp cinnamon, 1 tsp rock salt and add this to the slow cooker with 1 cup chicken stock, 1 jar tomato pasata and 1 tbs of honey. Brown the lamb neck chops and add them to the slow cooker for 4 hours. Soak some red split lentils in water for 4 hours and rinse until water is clear then add them to the slow cooker for the remaining 2 hours. This is a family favourite.

When you get them off the package they smell a bit off, but I guess that how real meat is suppose to smell not the stuff we but at the supermarket.
